I was asked last summer to make a wedding cake with a country western theme. I had a lot of fun planning this gorgeous cake! Each layer was a different type of cake with a different type of filling. The bottom was a white cake with my special blackberry filling. The middle was a marble cake with a vanilla cream filling. The top layer was chocolate with raspberry filling. As per my usual preference, I used vanilla buttercream to frost the cake. In my opinion, while buttercream doesn't usually get super extra smooth, it tastes infinitely better than fondant, and I feel that taste is most important for my cakes.
The fencing adds that country feel without overpowering the cake.
